English Christmas Special Recipe: Shepherd's Pie

The recipe has many variations, but the defining ingredients are ground red meat cooked in a gravy or sauce with onions, and topped with a layer of mashed potato before it is baked.

Ingredients required to make Shepherd’s Pie:

For the potatoes

350g potatoes, peeled and boiled

4 tbsp butter

½ cup processed cheese, grated

1 egg yolk

2 tsp salt

2 tsp black pepper

For the filling

2 tbsp olive oil

1 onion, finely chopped

4 garlic cloves, finely chopped

1 carrot, finely chopped

½ cup frozen peas

2 tomatoes, seeds removed and chopped

2½ tbsp butter

2½ tbsp flour

1 cup water

1 vegetable stock cube

500g chicken breasts, boiled and shredded

2 tsp salt

2 tsp black pepper

1 tbsp spring onion greens, finely chopped

A quick and easy hummus recipe

How to make Shepherd’s Pie:

1) Heat up the olive oil in a large pan and cook the onions, garlic, and carrots until slightly softened. Then add in the peas and tomatoes. Cook for another minute.

2) Add in the butter and flour and mix well to form the roux. Add in the water and mix until you get a nice gravy. Then add the stock cube and mix until dissolved. Cook until reduced and thickened slightly.

3) Add in the shredded chicken and season with salt and pepper to taste.

4) Place the filling into a large casserole dish.

5) Mash potatoes until smooth, and mix in the butter, cheese, and egg yolk. Season with salt and pepper to taste.

6) Using a spoon, put the potatoes over the filling and flatten the top. Place into the oven and broil for 7-8 minutes until potatoes are starting to brown.

7) Garnish with spring onions and serve.
