Carrots are extremely healthy vegetables. They are rich in Vitamin-A, calcium and Vitamin K. Moreover, they are great for the eyes and also help in keeping the blood sugar levels under control.

Carrot Soup

People usually consume carrot soup in the name of healing food or in their weight loss regimen. Perfect for an evening snack, to make this soup, all you need to do is take a pan, add some butter, onions and celery. Then add in your carrots and cook for a few minutes. Add water, salt and pepper and let it boil for 25 minutes. Pour this into the blender, blend and serve!

Carrot Juice

A refreshing morning drink, carrot juice is another weight loss juice that is prepared at home. In order to make this fresh and yummy juice, you have to take a blender, add diced carrots into the blender, along with some oranges and one cucumber. Add a bit of ginger, some honey and some water. Blend together and serve! You can also add in a few ice cubes to it to make the juice more refreshing!

Carrot Poriyal

Carrot poriyal is an easy-to-make, simple, light flavoured and delicious South Indian recipe. In order to make carrot poriyal start by heating some oil in a pan, add some oil, mustard seeds, shaved coconut, curry leaves, and finely chopped carrots. Keep the heat on low and let it cook for a while. After that add salt, mix well and cook for 10-15 minutes and turn off the gas. Take it out and serve with hot chapatis.

Carrot Parantha

Kids love paranthas and so do we! Making carrot paranthas is extremely easy and healthy if you use desi ghee to cook the parantha. Finely grate your carrots, add salt, lemon juice, coriander leaves, chillies and mix them well. Use this as the stuffing for your paratha and cook it well in ghee.

Carrot Cake

Making carrot cake is the best way to feed carrots to everyone who dislikes carrots. In a bowl mix wheat, baking powder, baking soda, cinnamon powder, walnut, eggs and honey (for sweetening). Add the puree of carrot and fold the batter. Bake it in a preheated oven of 180 degrees. Bake for 25 minutes and enjoy!
